Rose cupcakes

These beautiful cupcakes are so tasty and fresh, maybe not your typical cupcake choice, but believe me they are a delight. With a simple recipe to follow, why not try them out yourself!

You’ll need:
120g of unsalted butter
180g caster sugar
180g self-raising flour
2 tsp rose extract
1 tsp baking powder
2 eggs
Splash of milk

Method:
Heat the oven to 180c/fan 160c/ Gas mark 4

1)Line a tin with cupcake cases, and in a bowl cream together the sugar and butter until smooth and creamy, add in the rose extract and stir. Next crack in the eggs and fold in the flour and baking powder until well combined, you may need some milk if the mixture is a little stiff.

2) Once the mixture is ready, evenly pour into the cupcake cases and place in the oven for around 15 minutes or until golden and springy. Take out to cool and place on a cooling rack and set aside.

3) To decorate feel free to do however you wish, for mine I mixed some icing sugar with red food dye and water to create an icing and used shop bought flower decorations. Enjoy.
