Mini iced buns

Thought i’d try something new which i’ve not tried baking before, which are also one of my favourite baked treats, iced buns! This recipe is reasonably simple and super tasty.BTpn0CkIQAEwfbw

For this recipe you’ll need:

500g strong white bread flour

100g caster sugar

40g unsalted butter

14g yeast

2 medium eggs

135ml warm milk

125ml warm water

To decorate-

Icing sugar and water


Step1) Preheat oven to 200C/180C fan/gas 6. In a bowl place all the ingredients and give a good mix with your hands before kneading in the bowl to form a wet dough. Next place the dough on a lightly floured surface and knead for 8-10 minutes until the dough becomes very elastic.

Step2) Place the dough in a bowl, cover with a damp tea towel and leave to rise for an hour, i’d suggest a window shelf that gets sun. Once the dough has doubled in size, tip onto a lightly surface again and knead for a minute or so and divide into 16 even portions that resemble a sausage shape and place on a baking tray to rise until doubled in size once again, cover with a tea towel.

Step3) Once they’ve doubled in size, place in the oven for 10 minutes or until lightly browned and cooked, you may need to tear one apart. Leave to cool on a cooling rack before decorating with icing sugar and sprinkles if you wish.
