Banana and walnut cake

This Banana and walnut loaf is the perfect comfort food and one of my personal favourites with a cup of tea.

This recipe will be your new family favourite, it’s certainly mine!
200g caster sugar
150g unsalted butter
200g self-raising flour
2tbsp milk
3 medium eggs
2 mushed bananas
handful of walnuts

Preheat oven 180c/fan 160c/ gas4

Step1) Line a loaf tin with baking parchment and set aside. In a bowl cream together butter and sugar until smooth, then beat in the eggs 1 at a time and sift in the flour. Next add the milk and mushed up banana and stir well, scatter in the walnuts and give a final mix.

Step2) Pour evenly into your lined loaf tin, decorate with a few more walnuts if you wish, then place your loaf in the centre of the oven for 45 minutes or until risen and golden and when a folk inserted comes out clean. Place on cooling rack to cool, then it’ll be ready for you to serve and enjoy.
